Smith demonstrates African influence in contemporary cuisine

Ian Smith, a Culinary Instructor at OCVTS, presented a delicious program on African Influences on Contemporary American Cuisine, at the Little Egg Harbor Library, Wednesday, February 03, 2010. Mr. Smith used recipes from Delilah’s Everyday Soul by Delilah Winder as starting points for developing his own spicy vibrant dishes. Program attendees described the program as “Excellent!” and “very informative.” Everyone enjoyed sampling Mr. Smith’s Chicken Gumbo and Sweet Potato Soup. The program was sponsored by the Friends of the Little Egg Harbor Library.
